- 1 red onion (small, peeled and thinly sliced)
- 6 oz. candied walnuts (*, I made a half batch of this recipe)
- 4 oz. crumbled gorgonzola cheese
- 1/4 cup olive oil
- 1 Tbsp. apple cider vinegar (or balsamic vinegar)
- 2 tsp. Dijon mustard
- 1/2 tsp. fine sea salt
- 1/2 tsp. freshly cracked black pepper
