- 400 grams firm tofu (14 oz)
- 1 Tbsp. smooth peanut butter
- 2 Tbsp. tamari (or soy sauce if not gluten-free)
- 1 Tbsp. coconut oil (or sub vegetable or rapeseed oil)
- 2 spring onions (thinly sliced)
- 1 cm fresh ginger (½ inch ,peeled and minced)
- 2 garlic cloves (minced)
- 1 tsp. curry powder
- 1 pinch chilli pepper (cayenne, to taste)
- 1/2 tsp. ground turmeric
- 1 red pepper (thinly sliced)
- 1 handful fresh coriander (cilantro, roughly chopped)
- 1 tsp. agave syrup (or sub any other sweetener)
- 2 Tbsp. lime juice
- 1 stock cube (vegetable, ensure gluten-free if necessary)
- 150 mL coconut milk (⅔ cup)
- 1 Tbsp. smooth peanut butter
- 200 grams beans (7 oz ,French, green, trimmed and halved)
