  • 2 cups Pillsbury BEST All Purpose Flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon baking powder
  • 1 cup milk
  • 2 large eggs
  • 2/3 cup sugar
  • 1 cup Smucker's Natural Creamy Peanut Butter (stirred)
  • 1/3 cup Crisco Pure Vegetable Oil
  • 1/2 cup Smucker's Seedless Strawberry Jam
  • 1/4 cup sugar

    Directions

    1. HEAT oven to 375ºF. Spray muffin pan with no-stick cooking spray. Stir together flour, salt and baking powder in large bowl. Add milk, eggs, 2/3 cup sugar, peanut butter and oil to bowl. Combine ingredients with mixer on low speed, just until moistened. Do not over beat.
    2. FILL prepared muffin cups with half of batter. Place 2 level teaspoons jam or preserves in center of each muffin. Divide remaining batter between muffin cups. Sprinkle with 1/4 cup sugar. Bake 18 to 20 minutes. Remove from oven. Cool in pan 5 minutes.

    The kids wanted only jelly so we skipped the peanut butter. They had a great texture and taste. But I let the kids measure so I’m not sure how accurate the measurements actually were.

    These are ok...they didn’t taste peanut-buttery enough to me. They were good muffins and very moist but took a few more minutes than 20 to fully cook in the center. I also didn’t understand sprinkling 1/4 cup of sugar on top it was everywhere so I didn’t use it all but I should’ve listened to recipe because they were just not sweet enough. I will try to adjust next time.
