- 1/2 lb. chicken (cooked, shredded, optional, you can also use cubed tofu)
- 3 Tbsp. canola oil
- 1/3 cup creamy peanut butter (I used natural)
- 3 Tbsp. low sodium soy sauce
- 2 Tbsp. lime juice (about one lime)
- 1 Tbsp. honey
- 2 Tbsp. rice wine vinegar
- 1 cup carrots (raw grated)
- 2 cups broccoli florets (cooked chopped)
- 1/2 tsp. red pepper flakes (optional, I didn't use them)
- 2 scallions (sliced into thin rounds)
