- 2 Tbsp. red wine vinegar
- 1/3 cup extra-virgin olive oil
- 1/2 tsp. Dijon mustard
- 1 garlic clove (minced)
- 1/4 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 1 pt. cherry tomatoes (sliced in half)
- 8 oz. fresh mozzarella (pearl sized)
- 2 peaches (peeled, pitted and chopped, ripe, sweet peaches work best)
- 2 Tbsp. basil (chopped, or use small basil leaves)
