Great pie filling recipe. The cornstarch works well as a thickner. I added some tapioca also, about 3/4 tablespoon,to help with keeping the juices from running out of the pie. I had extra juicy peaches. I added spices I like, cinnamon & nutmeg to the filling & crumb topping. I cheated & used a frozen pie crust from Aldi. The pie came out perfect! I only used 1/2 of the crumb topping that this recipe produced, on my 1 pie. We only got 6 pieces from our pie! It was delicious. next time im going to add alittle almomd extract.

This is the best pie I’ve ever had. I added a dash of allspice nutmeg and ground clove as well as a splash of vanilla. I went with the crumble with brown sugar top so I could make two different pies. Amazing. Making again for my neighbors
