  • 1 can peach halves ([796 ml, 28 liq oz] California cling, [about 10 halves]*)
  • 400 milliliters full fat coconut milk
  • 1 cup cooked rice (starchy rice is recommended but any white or brown rice will do)
  • 2/3 cup cane sugar (granular, light coloured, I used organic light golden cane sugar)
  • 2 tablespoons cornstarch
  • 1 piece vanilla pod (or 2 teaspoons vanilla extract)
