- 1 can peach halves ([796 ml, 28 liq oz] California cling, [about 10 halves]*)
- 400 mL full fat coconut milk
- 1 cup cooked rice (starchy rice is recommended but any white or brown rice will do)
- 2/3 cup cane sugar (granular, light coloured, I used organic light golden cane sugar)
- 2 Tbsp. cornstarch
- 1 piece vanilla pod (or 2 teaspoons vanilla extract)
