- banana leaves (fresh, soaked for 15 minutes, optional)
- 4 green plantains (large, peeled and cut into 1-inch thick chunks and soaked in salted water)
- vegetable oil (for frying)
- 8 oz. pork rinds
- 8 cloves fresh garlic (peeled and mashed to a paste)
- 2 tsp. dried oregano
- 1/2 tsp. black pepper
- kosher salt (to taste)
- chicken stock (as needed)
