Ingredients

4 SERVINGS
- 4 large egg whites
- 8 Tbsp. caster sugar
- 1 tsp. vanilla extract
- 1 tsp. white vinegar
- 250 mL cream (thickened, whipped, to serve)
- passionfruit (pulp and fresh fruit to serve)

Directions
- Preheat oven to 200c. Line baking tray with silicone mat or baking paper.
- Beat egg whites in the bowl of an electric mixer until soft peaks form. Gradually add sugar, 1 tbsp at a time, beating until thick and glossy.
- Add vanilla extract, followed by the vinegar.
