<p>Vietnamese steamed buns with all the fluffiness you would hope for! Handle the dough carefully, so as not to leave dents in the finished buns, and don’t skip the step to brush the dough with oil – oiling stops the buns sticking together (which would make it tricky to get the filling in).</p>

- 35 grams dark brown soft sugar
- 2 Tbsp. black bean sauce
- 1 Tbsp. dark soy sauce
- 1 1/2 tsp. rice vinegar
- 2 prunes (soft dried)
- 1/4 tsp. sesame oil
- 1/8 tsp. Chinese five-spice
- 1/2 duck (crispy)
- 1 small carrot (peeled)
- 1/4 cucumber
- 2 spring onions (trimmed)
- 1 red chilli (thinly sliced on the diagonal, to garnish, optional)
- coriander leaves (to garnish, optional)
