- 500 grams squash (Button, Pattypans cubed 2″ pieces)
- 1 red capsicum (sliced into strips)
- 250 grams snow peas
- 1 carrot (peeled and thinly sliced on the diagonal)
- 2 large garlic cloves (minced)
- 1 knob ginger (sliced, Ginger and Garlic amount should be equal)
- 1 chilli pepper (– deseeded and sliced)
- 1 bunch coriander (chopped)
- 450 grams udon noodles
- 1/3 cup chilli sauce (Sweet Thai)
- zest
- juice
- chili sauce
- 50 grams toasted pine nuts
- oil (for frying)
- 3 Tbsp. soy sauce
- 2 Tbsp. Shaoxing wine (Chinese Cooking Wine)
- 1 1/2 tsp. peppers (Sichuan, crushed in pestle and mortar, Optional)
