- 2 Tbsp. tomato purée
- 900 grams tomatoes (fresh, ripe, skinned and finely chopped)
- 2 bay leaves
- 1 1/2 tsp. salt (or more to taste)
- 1 pinch sugar
- 1 tsp. red wine vinegar
- 1 egg yolk
- 1 tsp. Dijon mustard
- 1 clove garlic (or 6 cloves of roasted garlic, crushed)
- 1/4 tsp. salt
- 1 Tbsp. red wine vinegar
- 50 mL sunflower oil
- 50 mL extra-virgin olive oil
