- 8 medium potatoes (preferably a waxy variety like Yukon golds or reds)
- 4 lb. lean ground beef
- salt
- pepper
- 8 pies (double crust, or eight boxes prepared refrigerated pie crusts I use a double or triple batch of this pie crust.)
- 4 Tbsp. butter (or beef fat drippings)
- 4 Tbsp. flour
- 2 tsp. sauce (browning)
- 2 cups beef stock
- 1 pinch thyme (and granulated onion)
- salt
- pepper
