  • 1 tablespoon olive oil (for drizzling parsnip cubes)
  • sea salt (for the parsnips, in addition to more for the pasta water)
  • freshly ground black pepper
  • 1 box cavatappi pasta (or whatever type of larger pasta noodle you like)
  • 4 slices sliced bacon (thickly, diced)
  • 1 leek (medium, carefully cleaned, and then thinly sliced)
  • 3/4 cup heavy cream
  • 2/3 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley (optional....I think I forgot mine....)
