- 4 parsnips (weighing about 3/4 lb., peeled and cut into 1/2" cubes)
- 1 Tbsp. olive oil (for drizzling parsnip cubes)
- sea salt (for the parsnips, in addition to more for the pasta water)
- freshly ground black pepper
- 1 box cavatappi pasta (or whatever type of larger pasta noodle you like)
- 4 slices sliced bacon (thickly, diced)
- 1 leek (medium, carefully cleaned, and then thinly sliced)
- 3/4 cup heavy cream
- 2/3 cup grated Parmesan cheese
- 2 Tbsp. chopped parsley (optional....I think I forgot mine....)
