Description
All you need is 30 minutes and 9 ingredients to pull this recipe together. Parsley, goat cheese, and almonds are the perfect trio of flavors to season perfectly al dente pasta. A bit of mustard adds a nice little kick to the sauce. This meal a perfectly light summer meal that is full of flavor. The goat cheese adds a nice bit of salty creaminess while the almonds add a nice little crunch.

- 250 grams pasta
- 1/3 cup parsley (chopped)
- 2 Tbsp. low-fat sour cream
- 1/4 cup milk
- 1/2 tsp. mustard
- salt
- ground black pepper
- 10 almonds (coarsely chopped)
- 1/4 cup goat cheese (crumbled)

Directions
- Cook the pasta following the instructions on the package, al dente. Set aside and keep 1/4 cup of the water the pasta was cooked in.
- Add the parsley, sour cream, milk, and mustard to a blender, then puree until smooth.
- Heat this mixture in a large saucepan. Add the cooked pasta and the water. Taste and add salt and pepper if needed.
- Cook for 2 minutes until the liquid begins to evaporate.
- Sprinkle the almonds and cheese on top and serve the pasta immediately.
