Pasta with Blue Cheese and Prosciutto

  • 20 ounces stuffed pasta (fresh, such as agnolotti or ravioli)
  • 1 tablespoon oil
  • 4 ounces prosciutto (thinly sliced)
  • 1/4 cup chopped walnuts
  • 1 1/2 cups heavy cream
  • 5 ounces blue cheese (creamy, crumbled)
  • 2 tablespoons chives (snipped)

    Directions

    1. Cook the pasta in a large saucepan of boiling salted water according to the package directions. Drain.
    2. Meanwhile, heat the oil in a large skillet on high heat. Sauté the prosciutto and walnuts for 2-3 mins, until the prosciutto is crispy. Transfer to a plate.
    3. Add the cream, 4 oz of blue cheese and the chives to the pan and season to taste. Bring to a boil on high heat. Reduce the heat to low and simmer for 3-5 mins, until the cheese has melted and the sauce has thickened slightly.
    4. Add the pasta and toss to coat. Serve topped with the remaining cheese, prosciutto and walnuts.
