  • 8 ounces fresh mozzarella cheese

    Was a bit hesitant about making this, but was pleasantly surprised! I substituted the arugula with fresh basil and was very happy that I made the switch. Very easy, but flavorful recipe. Great for week night dinners and makes fantastic left overs. Can be served cold or hot!

    This recipe was really good. I did however, change a few things. I am personally not a big fan of tomatoes so I didn't add them. I also added spinach in with the arugula. It was still really good and I would make it again in a heart beat!
