Ingredients

- 1/2 cup mixed beans (dried, cannellini, or navy, soaked overnight in ample water to cover or speed soaked)
- 2 Tbsp. olive oil
- 1 Tbsp. chopped garlic (coarsely)
- 2 cups onions (coarsely chopped)
- 2 celery ribs (large, diced)
- 2 large carrots (halved lengthwise and cut into 1/2 inch slices)
- 1 bay leaf (large)
- 1 1/2 tsp. dried basil
- 1 tsp. dried rosemary
- 1/4 tsp. crushed red pepper flakes
- 5 cups boiling water
- 3 Tbsp. tomato paste
- 1 cup dry pasta (small or medium)
- 3 Tbsp. balsamic vinegar
- grated Parmesan cheese (Freshly)

Directions
- Drain and rinse the beans. Set aside.
- Heat 1 tbsp of the oil in the cooker. Cook the garlic over medium-high heat, stirring frequently, until lightly browned. Stir in the onions and continue cooking, stirring occasionally, for 1 minute. Add the celery, carrots, bay leaf, basil, Rosemary, red pepper flakes, reserved beans, and water.
- Lock the lid in place. Over high heat, bring to high pressure. lower the heat just enough to maintain high pressure and cook for the length of time indicated for the longest cooking beans. Allow the pressure to come down naturally or use a quick release method. Remove the lid, tilting it away from you to allow any excess steam to escape. If the beans are still quite hard, return to high-pressure for a few more minutes or replace ( but do not lock) the lid and simmer until they are just about tender. remember that they will be cooking 7 to 8 additional minutes with the pasta.
- Remove the Bayleaf and stir in the tomato paste and pasta. Continue cooking over medium high heat, stirring occasionally, until the pasta is tender, about seven minutes. Stare in the vinegar, additional tablespoon of olive oil, and salt. Garnish individual portions with Parmesan cheese if desired.
- ** If you're in a hurry, you can precook the pasta and add it at the end. The stew will not initially be as thick, but it will thicken and the pasta will swell upon standing
