- 1 cup soya beans (cooked, soaked overnight then cooked according to packaging instructions, usually for about an hour)
- 1/2 cup grated cheddar cheese
- 1 onion (finely chopped)
- 2 garlic cloves (finely chopped)
- 3 tomatoes (large, chopped)
- 1 red bell pepper (medium, roughly chopped)
- 1 Tbsp. tomato puree
- 2 Tbsp. olive oil (for frying plus a little more for drizzling)
- 3 Tbsp. white wine
- 1 Tbsp. butter
- 2 Tbsp. parsley (finely chopped)
- 1/2 tsp. sweet paprika
- 1 tsp. smoked paprika
- 1 tsp. fine sea salt
- 2/3 tsp. cayenne pepper
