- 2 cucumber (Lebanese, – julienne)
- 3 firm bean curd (– deep fried)
- 2 carrots (– julienne)
- 1 cup beansprouts (lightly blanch)
- 4 potatoes (steam, – quartered)
- 3 shallots (– thinly sliced)
- 1 cup plain flour
- 75 grams prawns (chopped)
- 1 tsp. salt
- 1/4 tsp. turmeric
- 200 mL water
- 2 cups cooking oil
- 20 dried chillies (–washed and soaked overnight and blend with 1 -1 1/2 cups of water*)
- 250 grams sweet potato (orange - blend)
- 250 grams roasted peanuts (– coarsely grounded)
- 2 cups fried shallots (golden, store-bought from Asian grocer)
- 4 Tbsp. raw sugar
- 2 Tbsp. sesame seeds (– roasted)
- 4 Tbsp. tamarind extract (concentrated)
