Description
Healthy but flavorful beef nachos with tasty black beans and corn salad. Lean ground beef, no-salt organic blue corn chips and veggies. First of all, the lime, then the avocado, tomatoes and spinach along with just a little cheese and, of course, the black olives. And don't forget the hot sauce. The black bean and corn salad is completely healthy, but the taste is amazing. The salad recipe can be found in the sides collection.

- 1 lb. lean ground beef (Good Quality, no additives)
- 1/2 cup salsa (Plus Extra for Serving, fresh or the refrigeration required version, not the jarred shelf-stable kind)
- 1 Tbsp. Cholula Hot Sauce (or your favorite brand)
- 1 bag blue corn chips (Organic No Salt Added)
- 2 cups Monterey Jack (Shredded, Cheddar, Queso Quesadilla and Asadero Cheese Blend, check the ingredients of the shredded cheese for unwanted additives)
- 1/2 cup pitted black olives
- 1 avocado (Medium)
- 1 handful spinach (spinach is one of those veggies that needs to be organic if possible, toxins can cling to it)
- 4 small tomatoes (or 1/2 Cup of Cherry Tomatoes, organic is preferred with tomatoes also)
- 1/2 lime (Juiced)
- 1 cup feta cheese
- ground black pepper (Sprinkle of)

Directions
- Prepare the toppings. Chiffonade (cut into long strips) the spinach. Cut the tomatoes into quarters or halves depending on their size. Dice the avocado and squeeze the juice of 1/2 a lime over it and gently stir together. Crumble 1 cup of the feta cheese and place it and all of the above ingredients into small bowls or onto plates. Fill a small bowl with salsa and another small bowl with whole olives for garnishing.
- Drop a small amount of Avocado oil in a non-stick pan. Crumble the ground beef into the pan and cook on medium heat until it is slightly browned.
- Add 1/2 cup of the fresh salsa and stir. I use the raw onion and garlic in the fresh salsa as an assist so I don’t have to add them separately. It’s a little time saver.
