Really nice pesto. I also added a few pine nuts to the mix and made in my Vitamix. Maybe add some lemon next time.

I accidentally bought Italian parsley instead of coriander for a recipe last week so I had a huge bunch of parsley which was going to spoil. I found this recipe, bought a packet of brown rice pasta, cooked up some zucchinis and mushrooms, mixed it all together and I had the best meal!
