- 2 cloves garlic ({or more if you’re like me and LOVE garlic!} peeled and sliced)
- 3 Tbsp. finely chopped parsley
- 3 Tbsp. finely chopped onion ({I end up using a little more than 3 tbsp for a little extra kick})
- 1 can tomatoes (whole, {break them up if they aren’t already})
- 1 bay leaf
- 1 dash salt
- 1 dash black pepper
- fresh basil leaves
- 1 lb. chicken (cut into chunks/strips)
- 2 eggs
- chicken
- 1/2 cup fat free Parmesan cheese (+ 1tsp garlic powder + salt and pepper to taste {in ziplock bag})
- 2 Tbsp. olive oil
