- water (enough to cover by one inch in a dutch oven)
- 1/2 cup flour
- 1 Tbsp. garlic powder (must be powder, not granulated)
- 1 tsp. black pepper
- 2 tsp. kosher salt
- 1/4 cup oil
- 1 tsp. Kitchen Bouquet
- 3 cups broth (reserved from the boiled beef, maybe more if your gravy gets too thick)
- 12 inches loaves (French, see article above)
- mayonnaise
- 2 tomatoes (sliced)
- 2 cups lettuce (shredded Iceburg)
- 1 dill pickle (sliced)
- roast beef (from the above recipe)

I took my husband on his first trip to New Orleans for our Birthday/Anniversary to Jazz Fest. I've been to New Orleans & the surrounding cities numerous times. Even lived in Slidell, LA for a min. While there I fell in love with the wet Roast Beef Poor Boy's. I introduced my husband to them on our trip. We went to Melba's. Since then we have been trying to remake them. And failed each time. Close but never on point. This was & has been the ONLY recipe that we have found that has come even slightly close. Sooo thankful I found this!
