- 1 kg tomatoes (meaty)
- 4 slices white bread (ciabata, or any other 1 day old)
- 1 onion
- 4 cloves garlic
- 1 tsp. dried oregano
- 200 mL chicken stock (or water)
- 20 grams grated Parmesan
- parsley (or basil to decorate)
- olive oil
- salt
- pepper

Directions
- Cut the bread slices into bite size cubes. Drizzle with olive oil and toast in a pan on medium heat until golden on all sides. Set aside.
- Cut the onion, cook in a pan with some olive oil until soft and starting to get some color. Add the slices garlic.
- Meanwhile prepare the tomatoes. Make a cross shaped cut on the surface of the tomatoes and blanch for 30 sec. Remove the skin and cut into cubes.
