  • 500 milliliters cream (23% fat)
  • 10 grams gelatin
  • 1 lemon
  • 150 grams powdered sugar
  • 100 grams frozen berries (I used aronia)
  • 4 tablespoons sugar
  • 1 teaspoon pectin
  • mint leaves (to decorate)

    Directions

    1. Soak the gelatin in 4 tbs of cold water.
    2. Put the cream in the pan. Add powdered sugar and lemon zest. Cook until it starts to bubble up. Lower the heat.
    3. In the soaked gelatin add 3 tbs of hot cream. Mix and add the gelatin mixture to the cream pan. Remove from heat and mix until the gelatin has dissolved.
