- 8 oz. crimini mushrooms (sliced, white mushrooms are authentic to the recipe, but I love crimini)
- 1 medium zucchini (cut in half lengthwise, then in 1/2 inch slices)
- 1/4 cup soy sauce
- 1 Tbsp. rice wine vinegar
- 2 tsp. sugar
- 3 garlic cloves (minced)
- 2 tsp. minced ginger (or 1/2 teaspoon ground ginger)
- sesame seeds (for garnish, optional)

I made this today and omg it was so good yet so simple I omitted the mushrooms only because i didn’t have any and served it with cauliflower rice, delicious 😋

i usually dont like making my own chinese food at the house. i often feel they over promise and under perform.
But this recipe is off the chain. My wife, who hates zucchine and mushrooms, is going back for 2nds. Its so easy to make, and rich in flavor. I used chicken breast tenderloins because its what i had, but changed nothing. I will be making this one again for sure..

This was really good quick and easy. I didn’t have fresh mushrooms on hand so I subbed in canned.
