- 5 oz. pancetta (package, diced, or use 6 slices of thick bacon, cut into bits)
- 1 pkg. shitake mushrooms (fresh, sliced)
- 1 clove garlic (minced)
- 1 bunch bok choy (chopped)
- 4 scallions (chopped)
- 2 Tbsp. tamari sauce
- 1/4 cup dry white wine
- 2 Tbsp. beef broth
- 2 Tbsp. coconut milk (or dairy cream)

Yummmm!!! I didn’t have any mushrooms (would be great with mushrooms) and I substituted rice vinegar for wine. Then I added small shrimp.
