Absolutely delicious. Cod is generally a very bland fish, but that means it'll take on any flavor that you give it - kind of like a canvas for the ingredients. The recipe calls for dry thyme, but because of that "canvas"-like quality, I'd recommend fresh thyme, salt, and pepper; otherwise it could be on the bland side. The trick is also the beautiful crisp crust with the soft tender insides - the trick is the cast iron skillet !!
