I tried this tonight, because my husband was just diagnosed with Type 1 diabetes. It was a huge hit! Clean plates all around -- even the toddler's! There are practically no carbs in this recipe, so I especially loved knowing that he could eat as much as he wanted and not worry one bit! Served with a fresh veggie mix.
