- 1 chunk iceberg lettuce (unwashed)
- 1 tomato (quarter, unripe, potato-y supermarket)
- 4 slices cucumber
- 3 yellow onion (shreds plain, [on a particularly festive day, it’s replaced with green onion])
- Italian dressing (bottled)
- 2 pears (medium, cored and cut in eighths)
- 2 Tbsp. xylitol (or Lakanto)
- 2 tsp. apple cider vinegar
- 8 cups baby arugula
- 1 goat cheese (recipe Cashew, see below)
- 1/2 cup walnut halves (lightly toasted)
- 1 lemon (medium, about 1/4 cup or 60 ml)
- 6 Tbsp. extra-virgin olive oil (preferably organic)
- liquid stevia (Pure plain, to taste, I used about 15 drops)
- 1 pinch fine sea salt (to taste)
- 1 cup raw cashews
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. lemon juice (freshly squeezed)
- 1 tsp. white miso
- 1/2 tsp. fine sea salt
- 1/4 cup water (if necessary)
