Another reviewer said that they didn't use buttermilk, and it turned out fine. Well apparently that's what I should have done. We used the buttermilk and the breading did nothing but fall right off. We ended up just covering the fish in lemon pepper seasoning and cooking them without breading.
I will note, though, that this was my first time pan frying fish.
