- 450 grams yukon gold potatoes (diced into 1 cm, 1/2 inch cubes)
- 150 grams onion ((about 1/2 medium onion) chopped)
- 1 clove garlic (minced)
- 2 Tbsp. vegetable oil
- 1 tsp. ancho chili powder
- 1/4 tsp. ground cumin
- 1/4 tsp. dried oregano (preferably Mexican)
- 1/8 tsp. black pepper (preferably freshly ground)
- 1 pinch ground cloves
- 1 pinch canela
- salt
- 2 Tbsp. sauce (guajillo, from above)
- 1/4 cup water
- 6 buns (Portuguese, or pan basso buns, if you can find them)
- leaf lettuce (or iceberg lettuce, shredded)
- tomato
- oaxaca cheese (or Mozzarella, shredded, optional)
- egg whites (hard boiled, leftover from making salsa verde with eggs)
- refried beans
- 3 Tbsp. vegetable oil (for frying)
