A scrumptious frittata with a spicy spanish flare, using chorizo, or whatever spicy flavored meat you desire.
Ingredients

- 2 Tbsp. coconut oil
- 1/2 lb. sausage (chorizo or other, uncooked)
- 1 sweet potato (shredded, 1 cup)
- 1/2 cup bell pepper (sliced)
- 1/4 cup diced yellow onion
- 8 eggs
- 1 tsp. coconut milk
- 1/4 tsp. salt
- 1 tomato (sliced in rings)
- 1/2 avocado (sliced for garnish, option ; 1 Tbsp cilantro for garnish, option, optional)

Directions
- Preheat oven to 350 degrees.
- Heat oil over med heat in an oven safe 8-10 inch skillet.
- Add sausage, sweet potato, bell pepper and onion to skillet. Saute for 4 minutes.
