It’s a good, easy recipe. I followed the recipe exactly and for me down in Houston, it took longer than 30mins to cook we ate the edges until the middle got done. That’s always my issues with egg casseroles. The egg never wants to finish.

I have made this at least 5 times. i usually use breakfast sausage instead of chorizo so it is not too spicy for my 4 year old. When I did the whole 30 I used ground pork and added in my own seasoning to make it truly paleo/compliant. It is very filling and has a nice sweet-savory flavor.
