- 5 lb. oxtails (bone, 1pound each of beef marrow knuckles, lamb hooves and shoulder bones)
- 6 qt. water
- 2 Tbsp. tomato paste
- 3 medium carrots (cut into large pieces)
- 3 rib celery (cut into large pieces)
- 1 yellow onion (or large white, quartered)
- 8 oz. shiitake (dried, and king mushrooms)
- 1 head garlic (whole, peeled and smashed)
- 2 inches ginger (sliced)
- 4 Tbsp. fish sauce (paleo-approved)
- 3 Tbsp. apple cider vinegar
- 1 Tbsp. whole black peppercorns
- 2 bay leaves (large)
- kosher salt (to taste, after it’s made)
- 2 zucchinis
- 1 kelp noodles
- 1 qt. bone broth
- 1 1/2 cups hot water
- 1/2 kombu (a sheet of, about 6 grams, to make a dash/stock)
- 10 oz. ribeye steak (seasoned with salt and pepper)
- 1/2 lb. shiitake (or king mushrooms, sliced)
- 2 Tbsp. oil (divided)
- 1 clove garlic (minced)
- 2 soft-boiled eggs (I use this method from The Kitchn)
- 1/4 cup cilantro (chopped)
- 1/4 cup green onions (chopped)
- 2 finger chili (or thai red chilies)
- seaweed (Toasted, snack on the side, to crumble in)
