- 1 cup almond flour
- 1/4 honey
- 1/4 cup coconut sugar
- 1 tsp. baking powder (you can also use 1/4 tsp baking soda & 1/2 tsp cream of tartar, if you are against using baking powder)
- 1/2 tsp. salt
- 6 Tbsp. coconut oil (or grass fed butter, chilled)

Peach filling was delicious and could stand alone! The topping looked great til I added the water and then it was super soft.

Meh. I really wanted to like this. Unfortunately, the topping had a gritty texture I couldn't overcome. It was less biscuity than I was used to in a cobbler, almost mushy. I even baked it 10 mins longer than the recipe indicated to ensure it got crispy. I realize there is often some sacrifice required in flavor and texture when making healthier versions of our fav foods. In this case, I think the sacrifice was too big.
