This muffin is exactly what I was looking for... healthy, nutritious, easy to make. I'm allergic to coconut, so substituted 1 T canola oil and 1 T ground flax for the coconut oil. Next time around I might add more raisins and a little more spice. All said, this muffin is most and very slightly sweet. I love it!
