    I make these all the time and swap out ingredients. like using spinach and mushrooms. It is fun to get creative with this recip.

    Delicious! I didn’t have all the ingredients so I swap them with scallions, yellow bell peppers and turkey sausage instead.

    These were fabulous, but the nutritional info is off. Unless you used a mini muffin pan? For a regular sized muffin, they are 150 calories. Definitely in the weekly rotation now!

    Yes I have made this but with peppers/oinions /mushrooms and zuchinni and oinion mushrooms. Super easy and convient. Made on Sunday and just had to warm 2 up in the microwave for 30/45 sec and done out the door you can go.

    This was delicious and fairly easy to make. Will definitely be making this again!! The only adjustment I made was using just half of a green pepper

    We make this in double batches. Even our kids eat them! They reheat okay in the microwave, but don't cook them for longer than 18-20 seconds.

    These little muffins are perfect for when you're in a hurry in the morning but still want to eat something filling and nutritious! I chopped up some Nuremberg Sausage from Trader Joe's since I didn't have any ground sausage on hand-- it tasted fine although I can see how ground sausage would have been more flavorful. We'll be making these again!

    Adding organic white cheddar cheese to the top of the muffin gives more flavor. I advise adding a teaspoon of salt to the whisked blend before baking. Whisk in at least a quarter cup of white cheddar cheese for more flavor and do not over cook any of them. I tried it without sausage and it was still good but would've been better with turkey sausage.
