- 3 sweet potatoes (medium, diced & roasted)
- 2 lb. cauliflower (riced, see notes!)

- 1 cup English cucumber (diced)
- 1/2 cup radishes (sliced)
- 2 avocados (sliced)
- 2 eggs (soft boiled & cut in half)
