I've made this several times and never fail to love it. i always use coconut oil instead of palm shortening. sometimes agave instead of honey, but i think the honey just turns out better. sometimes add cinnamon nutmeg and almonds, but its just as good without. Always turns out incredibly moist. so moist it often seems to almost burn and still seem sort of flat and undercooked. it helps to use a pinch more baking soda and cook in mini pans, which are more fun anyway. i also find you need to be very sparing with greasing the pans. overdoing it just makes the edges burn easier, and the almond meal itself adds so much oil it never seems to stick. but dont worry, it can look very much too dark and still taste great.

It was delicious. Easy recipe, I added pecans at the end. Made muffins instead of loaf. 25 minutes baking. Will make again.

I must've done something wrong because when i let it cook it ended up burning the top of the bread and the inside wasn't cooked thoroughly. Put it in longer for the inside to cook (after letting it cool for an hour) and even after putting it in for another 20 minutes, the inside still didn't cook all the way :(

Really good gluten free banana bread. I baked in 3 mini loaf pans for 55 min. I also subbed with coconut oil and used maple syrup instead of honey and added cinnamon, walnuts and raisins.

Amazing! Even my friends that are non paleo love it. I just wish there was a substitute for coconut flour.
