- 12 Tbsp. grass-fed butter
- 6 Tbsp. ice water
- egg yolk (lightly beaten)
- 3 apples (large, or 4 medium, peeled, cored, and sliced, I use a mix of Cortland and McIntosh)
- 1 Tbsp. lemon juice
- 1 Tbsp. raw honey
- 1 Tbsp. coconut sugar
- 1 Tbsp. tapioca flour
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 pinch salt
- 1 cup unsalted cashews (soaked in boiling water for 1 hour)
- 1/2 cup maple syrup
- 1 tsp. vanilla extract (or vanilla bean paste)
- 1 tsp. almond extract (or maple extract, if you want the maple flavor to be more pronounced)
