- 1 1/4 lb. chicken (bone-in, cut up, skinless, cleaned and excess skin removed)
- 1/2 yellow onion (small, ~75 g, roughly chopped)
- 1/2 Tbsp. cumin seeds
- 1/2 Tbsp. coriander seeds
- 1/2 Tbsp. black peppercorns
- 1 cinnamon stick (2-inch, both Cassia & Ceylon are fine)
- 1 bay leaf (medium dried)
- 3 green cardamom pods
- 1 black cardamom
- 3 whole cloves
- 2 tsp. kosher salt
- 1 1/2 cups basmati rice (~275 g aged, long-grain)
- 1/4 cup neutral oil (such as grapeseed oil)
- 2 Tbsp. ghee (or sub butter)
- 1 yellow onion (medium, ~175 g, thinly sliced)
- 1 bay leaf (medium dried)
- 1/2 tsp. cumin seeds
- 1/2 tsp. coriander seeds (roughly crushed using a mortar & pestle)
- 1/2 tsp. whole black peppercorns
- 2 whole cloves
- 1 piece cinnamon stick (optional)
- 1 black cardamom (optional)
- 5 garlic cloves (crushed or very finely chopped)
- 3/4 inch fresh ginger (crushed or very finely chopped)
- 1/2 tsp. kosher salt
- 2 green chili peppers (small, such as Thai, bird’s eye or Serrano, finely chopped)
- 1 tomato (small, ~100 g, I use Roma, finely chopped or roughly pureed in food processor, optional – See Note 2)
- 1 1/2 Tbsp. yogurt (whisked)
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. Garam Masala
- 3 Tbsp. cilantro leaves (finely chopped)
- 2 Tbsp. mint leaves (finely chopped)
