- 700 grams monkfish (on the bone, 1-1/2 lbs or 500g (1 lb) white fishfilllets plus some fish bones.)
- 250 grams prawns (8 oz, in the shell)
- 500 grams clams (2 lbs, or mussels, cleaned)
- 250 grams baby squid (8 oz, cleaned)
- 500 grams risotto rice (1 lb, or spanish medium-grain, washed)
- 500 grams onions (1 lb, chopped)
- 300 grams peas (10 oz, podded, Tender pods from, or 1 celery stalk, chopped, plus 50 g (2 oz) mange-tout, trimmed in short lengths)
- 400 grams tomatoes with juice (14 oz, canned)
- 250 grams green peppers (8 oz, seeded and cut in squares)
- 100 grams french beans (4 oz, trimmed, in short lengths)
- 75 grams chickpeas (3 oz, cooked, or haricot beans, or frozen broad beans)
- 75 grams peas (3 oz)
- 5 garlic cloves (fat, finely chopped)
- 150 mL olive oil (1/4 pint)
- 150 mL white wine (1/4 pint)
- 1 bay leaf
- 20 saffron strands (or 2x2 g packets of powder)
- 2 tsp. paprika
- salt
- freshly ground black pepper
