- 1 1/2 lb. lobster (steamed/cooked, split)
- 1/2 lb. prawns (large, 2-3 count per pound, peeled and deveined, last section left intact)
- 12 mussels (fresh, rinsed and scrubbed)
- 2 Tbsp. olive oil
- 2 oz. spanish chorizo (diced)
- 1 cup chopped onion
- 1 bell pepper (diced)
- 5 cloves garlic (sliced)
- 2 bay leaves
- 1 cup fresh tomatoes (diced)
- 1/2 cup dry white wine (Chardonnay)
- 1 tsp. saffron threads (finely crushed)
- 1 tsp. pepper (choricero or nora, powder, or paprika)
- 1 cup bomba rice (short grain, may substitute arborio rice)
- 2 cups lobster stock (or fish stock or vegetable stock, I used Better than Bouillon lobster base mixed with water)
- 2 scallions (thinly sliced)
- 1 Tbsp. fresh parsley (minced)
