- 1 cup shallots (diced, or onion, 4 medium shallots or 1 large onion)
- 1 green bell pepper (diced)
- 2 tsp. fresh ginger (minced)
- 1 tsp. garam masala (or other curry powder, available in the Asian or spice section of supermarkets)
- 4 tomatoes (large, firm but ripe, coarsely chopped)
- 1/4 tsp. red chili flakes (dried, optional)
- 2 cups white cannellini beans (cooked, can be boiled ahead and cooled; canned and drained is OK too)

- 3 Tbsp. butter (optional)
- 1/2 lemon (juiced)
- 3 Tbsp. cilantro leaves (chopped fresh, plus extra for garnish)
