- 180 grams fish sauce
- 225 grams palm sugar
- 60 grams brown sugar
- 150 grams tamarind
- 10 Tbsp. water
- 250 grams rice noodles (wide dry flat)
- 6 Tbsp. vegetable oil
- 1 cup sauce (the above prepared Pad Thai)
- 1 Tbsp. shrimp paste (in oil)
- 10 grams garlic (peeled and finely chopped)
- 20 grams shallots (peeled and finely chopped)
- 10 grams dried shrimps (small, I did not use the Thai dried shrimps)
- 2 pieces firm tofu (cut into strips)
- 250 grams prawns (peeled and deveined)
- 2 eggs (cracked into a bowl)
- 7 stalks chinese chives (cut into 3cm long)
- 200 grams bean sprouts (remove the tail)
- 1 Tbsp. chilli flakes (dried red)
- 1 lime (cut into ½)
- 3 Tbsp. roasted peanuts (chopped)
