- 10 rice paper wrappers (brown or white, I love Banh Trang brand)
- 2 cups sliced carrots (thinly)
- 1 handful fresh cilantro
- 3 Tbsp. tamarind concentrate (I love this brand)
- 3 Tbsp. tamari soy sauce (+ more for tofu)
- 4 Tbsp. coconut sugar (or maple syrup, or sub brown sugar or honey if not vegan)
- 1/2 lime (juiced, ~1 Tbsp, 15 ml)
- 2 tsp. garlic chili sauce (I love this brand + more for tofu)
- peanut sauce (/ Almond Sauce / Cashew Sauce)
- Sriracha

My first time making a dish with tofu and it ended up wonderful! I doubled the sauce just because I like it more saucy but overall it was great.

I’m not experienced at cooking whatsoever so this recipe was pretty difficult for me even though I bought premade pad Thai sauce. Really good idea and they’re delicious. Rice paper is really hard to handle if you haven’t before 😂

Absolutely delicious! Add some bean sprouts or switch out the veggies based on preference or availability and you've got a winner!
