- 2 Tbsp. lemongrass (minced, or 1 tablespoon powder)
- 1/2 cup coconut milk
- 3 eggs (beaten in a bowl)
- 1/3 cup scallions (sliced)
- 2 Tbsp. cilantro leaves (minced)
- 2 cups soybean sprouts
- 3 Tbsp. hot sauce (bottled)
- salt (to taste)
- 1/2 cup roasted peanuts (chopped, skip if you would rather not have nuts)
