Ingredients

4 SERVINGS
- 6 oz. wide rice noodles
- 2 Tbsp. oil (divided)
- 3 garlic (minced)
- 2 eggs (lightly beaten)
- 2 cups cooked chicken (or meat of choice)
- 4 cups mung bean sprouts
- 1/2 cup scallion greens (sliced)
- 1/4 cup rice vinegar
- 2 Tbsp. fish sauce
- 2 Tbsp. brown sugar
- 1/2 tsp. crushed red pepper (optional)
- dry roasted peanuts (chopped, optional)
- lime wedges (optional)

Directions
- Bring a large pot of water to a boil. Add the noodles and cook until just al dente 6-8 mins. Drain.
- Heat 1 tbsp oil in a wok over high heat until very hot, add garlic and stir-fry until golden. Add the eggs and cook stirring until scrambled.
- Add the remaining ingredients and heat through. If desired sprinkle with red pepper, chopped peanuts and serve with lime wedges
